Croissants 2.0

Happy 2020! If you’ve been following me for a while, you may remember that at some point in the mid-2010s I was obsessed with croissants. The obsession has not waned, but my current kitchen counter space hasn’t been been ideal for rolling out long pieces of dough. Luckily, it only took me a gazillion years to realize that I can make half batches….

Well — here they are. One and half day of Netflix binge watching later: Five buttery croissants from the weekend.

Recipe from Joshua Weissman with slight modifications. I used a mix of whole wheat and all-purpose flour and three folds instead of the instructed three.
